VARIATION

You can also add 50g (1¾oz) chopped pecans or walnuts to these brownies, if you like. These should be gooey in the middle with nuggets of molten chocolate and sour cherries to cut through the richness.

TRIPLE CHOCOLATE CHEESECAKES

MAKES 8

For the bottom layer

150g (1¼ cups) chocolate ginger biscuits

60g (¼ cup) unsalted butter, melted

¼ tsp ground ginger

For the middle layer

150g (1 cup) good-quality dark (bitter-sweet) chocolate (70 per cent cocoa solids), broken into squares

300g (1⅓ cups) soft cream cheese, at room temperature

200ml (¾ cup) double (heavy) or whipping cream

75g (½ cup plus ½ tbsp) icing (powdered) sugar

1 piece stem ginger, finely chopped

3 tbsp syrup from the ginger jar

For the top layer

275ml (1 cup) double (heavy) cream

100g (⅔ cup) white chocolate, broken into squares

100g (1¼ cups) white and dark chocolate curls

chocolate stars

edible silver glitter
